Sour Cherry Lekvar
Ingredients
- 2 cups dried tart cherries
- ½ cup lemon juice
- ½ cup water
- ½ cup sugar
- 1 vanilla bean split
Instructions
- Put dried cherries, lemon juice, and water in pot and stir in sugar. Add vanilla bean. Heat over medium-high heat until it begins to bubble, lower to a simmer and let simmer for 15-20 minutes or until most of liquid is reduced.
- Remove from heat, and remove vanilla bean. Transfer cherry mixture to a food processor and coarsely chop (pulse for a few seconds).
