Joe Salerno’s Spaghetti Sauce & Meatballs

SAUCE INGREDIENTS

  • 1 28-ounce can tomato puree
  • 2 28-ounce cans crushed tomatoes
  • 1 8-ounce can tomato paste
  • ½ 28-ounce can water
  • ½ 28-ounce can chicken broth
  • 1 large green pepper optional
  • 2 tablespoons grated parmesan cheese
  • 1 small yellow onion (or 1 teaspoon onion powder)
  • 2 cloves garlic (or ½ teaspoon garlic powder)
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon crushed dried rosemary
  • ½ teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 3 dried bay leaves
  • 2 tablespoons sugar

Optional Meats

  • 2 pounds stew beef or 1½ pounds Jessup style sausage or 1½ pounds sweet Italian sausage

INSTRUCTIONS

  1. Puree the onion and garlic with a little water in a small food processor. Simmer all ingredients on low for 2 - 2½ hours.

MEATBALL INGREDIENTS

  • 2½ pounds ground beef
  • 1 chopped onion optional
  • 3 eggs
  • 2 tablespoons grated parmesan cheese
  • ½ cup bread crumbs
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
