Joe Salerno’s Spaghetti Sauce & Meatballs
Sauce Ingredients
- 1 28-ounce can tomato puree
- 2 28-ounce cans crushed tomatoes
- 1 8-ounce can tomato paste
- ½ 28-ounce can water
- ½ 28-ounce can chicken broth
- 1 large green pepper optional
- 2 tablespoons grated parmesan cheese
- 1 small yellow onion (or 1 teaspoon onion powder)
- 2 cloves garlic (or ½ teaspoon garlic powder)
- ¼ teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon crushed dried rosemary
- ½ teaspoon dried basil
- 1 teaspoon dried oregano
- 2 teaspoons dried parsley
- 3 dried bay leaves
- 2 tablespoons sugar
Optional Meats
- 2 pounds stew beef or 1½ pounds Jessup style sausage or 1½ pounds sweet Italian sausage
Instructions
- Puree the onion and garlic with a little water in a small food processor. Simmer all ingredients on low for 2 - 2½ hours.
Meatball Ingredients
- 2½ pounds ground beef
- 1 chopped onion optional
- 3 eggs
- 2 tablespoons grated parmesan cheese
- ½ cup bread crumbs
- ¼ teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
