Moroccan Salad with Mint and Figs


  • 2 cups pearl (Israeli) couscous or 1 cup quinoa
  • 1 cup chopped dried figs
  • ½ cup chopped fresh mint
  • ¼-½ cup minced red or sweet onion
  • Slivered almonds optional


  • ¼ cup fresh lemon or lime juice
  • ¼ cup extra-virgin olive oil
  • 1 tablespoon honey
  • zest from one lemon or lime


  1. Cook couscous or quinoa according to package directions. Set aside to cool.
  2. Whisk dressing ingredients together.
  3. Mix dressing, figs, mint and onion with couscous or quinoa.
  4. Add salt and pepper to taste.
  5. Top with slivered almonds if desired.
