Moroccan Salad with Mint and Figs
Ingredients
- 2 cups pearl (Israeli) couscous or 1 cup quinoa
- 1 cup chopped dried figs
- ½ cup chopped fresh mint
- ¼-½ cup minced red or sweet onion
- Slivered almonds optional
Dressing
- ¼ cup fresh lemon or lime juice
- ¼ cup extra-virgin olive oil
- 1 tablespoon honey
- zest from one lemon or lime
Instructions
- Cook couscous or quinoa according to package directions. Set aside to cool.
- Whisk dressing ingredients together.
- Mix dressing, figs, mint and onion with couscous or quinoa.
- Add salt and pepper to taste.
- Top with slivered almonds if desired.
